This one is super easy to make and will definitely satisfy your sweet tooth. Start by mashing two large ripe bananas in a bowl,then add two eggs and whole wheat flour or oat flour to the mixture. After they’re all mixed, add half a teaspoon of cinnamon, a dash of salt and baking powder and set aside. Heat up a non-stick pan with butter and cook until golden, you can add maple syrup or caramel sauce to finish it off.

Heat olive oil in a pan, sauté onion and bell pepper until soft, then add garlic, cumin, paprika, and chili flakes for a burst of flavor. Stir in chopped tomatoes, season with salt and pepper to taste, and let it simmer until thick. Create small circles, and crack in the eggs, cover, and cook until it’s all set. Garnish with fresh parsley and sourdough bread
