CAIRO – 3 July 2017: Lactose syrup from palm trees known as “Ellaqmy” in Arabic is the juice extracted over night from a single palm tree. It is an old practice that continues to be passed down from generation to generation.
The “health-giving” juice of palms is similar to coconut milk in structure, but with the faint taste of dates. This sugary drink is relished in various Middle Eastern countries. Also known in the oasis of Siwa in Egypt, a man shouting up and down local markets carrying Ellaqmy is a familiar scene in the oasis.
It is extracted by pulling out almost all the branches of a palm tree. Their spikes are also removed to make room for the extractor to begin their work. The extractor then removes all palm loafs exposing the white soft part of the palm. By making some scratches in this part, it produces the desired lactose. Then a straw is connected to a bottle to collect the juice overnight. Collecting the juice takes place right before the sunrise. The best quality syrup is produced from an unaltered palm.
With special care every day, the palm tree continues to produce the drink. The drink quickly turns acidic due to its high sugar content. Therefore, it is recommended to be consumed instantly.
