Garlic and spices bring out the flavor of these clams
Ingredients(takes 20 minutes to make)
1 kg clams
2 tbsp olive oil
5 garlic cloves, sliced
2 red chili peppers, sliced
3 spring onions, sliced
Salt and pepper
1 tbsp paprika
1 tsp cumin powder
1 cup water
1 tbsp lemon juice
¼ cup fresh coriander, chopped
Chopped chives for garnishing
Wash clams with cold water and scrub the shells to remove any sand. Strain from any excess water.
In a large cooking pan heat the oil and add garlic, chilies and spring onions. Add the clams and season with salt, pepper, paprika and cumin. Add water, lemon juice and coriander. Bring to a boil and once shells have opened remove from heat. Garnish with chopped chives and serve warm with lemon wedges.
