CAIRO – 21 April 2021: Among the most favored desserts in the holy month of Ramadan is the Kunafa.
Made with nuts, cream, hunny, chocolate or even fruits, the Kunafa survived over centuries.
Hisham Fathy is a Kunafa maker, and has inherited one of the oldest shops that make the dessert in Cairo from his great grandfather.
Fathy is a lawyer, and he also manages his family’s dessert shop. “I will always be proud to manage a Kunafa shop despite my work as a lawyer.”
Kunafa is made of a mixture of flour, water, powdered milk and other material; they are baked on a round surface of traditional round ovens.
The mixture of liquified dough is poured through a cup-shaped strainer onto the surface outside the oven. Part of the enjoyment of the dessert relies in watching the Kunafa maker pouring the mixture and making shapes on the surface, precisely and fast.
Home-made Kunafa are usually baked before sunset so that the family enjoy them after Itar meal (A meal to break the fasting with after sunset).
